
As a kid, I remember watching my mother pour freshly used grease into a tin can and her pushing the can back in it's designated place. This can contained grease from several episodes of cooking. This grease can held a collective substance that had aided in the preparation of fish, chicken and anything else that needed to be fried. She learned this form of "recycling" from her mother. And here I am pouring, into a bowl, grease that I used to cook fries. It's important to mention that the fries were really good. I was thinking to myself "the seasoning is still in that grease..I bet it would be even better next time". I also thought, "grease is expensive"...lol. I used to judge the practice and poke fun at my mom. Now I am my mom. I get why she and her foremothers reused cooking grease. I know this is not a healthy practice, but I am going to use this grease tomorrow and gobble up another helping of deep fried fries. To my credit, I used canola oil and not the infamous white lard!
